Tip 9To avoid wilted Salad Greens.



To avoid wilted salad greens, toss greens in a little oil before adding the dressing.  The oil will coat the leaves so the greens don’t wilt.  Only add the dressings on salads just before serving.



Tip 10 A Great Recipe for “White Sauce”

Do you need a great recipe for White Sauce?  If you do, then look no more for this is the one to use. Keep it handy!   It is easy and can be used with many different dishes.

White Sauce
1 tbsp cornstarch
1 c milk
¼ tsp salt
1/8 tsp pepper
2 tbsp margarine (or use butter)  

Combine cornstarch, salt, and pepper in a saucepan and gradually blend in milk until smooth.  Add margarine.  Bring to a boil over medium heat while stirring constantly.   Boil for 1 minute. Pour over vegetables and serve.

Add beer to cabbage and vegetable soups for a tangy flavor. 

When adding the beer do it just before serving, do not boil.

Soups should be served either piping hot or well chilled, depending on the type of soup.  Hot soups may be served in heated bowls, lidded bowls or tureens. Cold soups, such as fruit soups, may be served in chilled bowls.


Tip 6 Idea for making stock for your soups.

Pour your own homemade stock into ice cube trays to freeze.  Most ice cube trays hold 1 Oz in each compartment.  This gives you instant stock to use in recipes.

Tip 1Instead of just using salt and pepper to season eggs here is a list of herbs, you may like - basil, bay leaves, marjoram, rosemary, sage, savory, tarragon, or thyme.




Tip 2Here is a list of herbs to season breads. They add a wonderful taste to breads. Basil, coriander, dill, fennel, marjoram, parsley, savory, or thyme.



Tip 3Here is a list of herbs that can be used to season soups and will give soups a zesty tasty flavor.  Basil, bay leaves, chervil, chives, coriander, dill, marjoram, parsley, sage, savory, sweet Cicely, tarragon, or thyme.



Tip 4 Soups



If you want a different taste to your soup flavor just add wine.



Wine will enhance the flavor of many soups.  Match the wine with the soup, a mild wine for delicate poultry and fish soups, a full-bodied red wine for hearty soups.

A general rule is to use about ¼ - ½ cup wine per quart of soup.

If you add wine to your soup, then reduce the amount of salt because the wine brings out more of a salty taste. Do not boil soup after adding wine.
