Boston Baked Beans
3 cups pea beans or navy beans
2 tsp salt
3 tbsp. Molasses
2 tbsp. Sugar
¼ tsp mustard
Boiling water
½ lb. Salt pork
Soak beans overnight in cold water,
drain and rinse and add more water if necessary.
Drain and rinse and add enough
water to cover to the beans.
Measure the water so it is 2 to 3
inches over top of the beans.
Bring to the simmering point and
cook until the skins begin to burst.
Drain and put in a bean pot or
casserole dish.
Mix the seasonings with a cup of
boiling water and add to pot.
Pour boiling water over the salt
pork, scrape the surface of the rind and cut through the rind every half inch.
Put in the beans so that just the
rind is exposed.
Cover with boiling water and bake
in slow over, adding water from time to time.
A small onion may be buried in the
beans for extra flavoring.
Time in baking – 6 to 8 hours. Set oven at 300 degrees.
